You’ll harvest olives by hand using traditional techniques—gently striking branches and gathering fruit from beneath the trees. Once your basket is full, our olive-curing expert will guide you through the centuries-old process of transforming raw olives into gourmet cured delicacies.


There are many ways to cure olives—from dry salt and lye curing to the old-world favorite, brining. Over several months, the brine naturally develops rich, complex flavors. Guests will also learn how to personalize their batches with herbs and spices, creating a taste that’s uniquely their own.
